Yellowfin Sole 

The yellowfin sole is one of the most abundant flatfish
species in the Bering Sea and is the target of the largest
flatfish fishery in the United States. Yellowfin sole are
distributed in North American waters from coastal British
Columbia, Canada, to the Chukchi Sea and south along
the Asian coast to the South Korean coast in the Sea of
Japan. Yellowfin sole are targeted primarily by trawl
catcher-processors. The term "sole" is sometimes
used interchangeably with "flounder".

Yellowfin sole are a relatively slow growing and long- lived.
The Yellowfin sole upper side of the body is olive to brown in
color, with dark mottling, with faint dark bars and a narrow
dark line at the base. Scales are rough on both sides
of the body.

Yellowfin sole has a firm, delicate texture with small flakes
when cooked but they have a very mild, sweet flavor. These
fish are high in protein and low in saturated fat, and are an excellent source of selenium, phosphorus and Vitamin D.










This is a species available throughout the year, primarily
as frozen skinless, boneless fillets. Most yellowfin sole
weighs less than a pound so it's usually sold as 2/4 oz.
(or 4/6 oz.) fillets. It is almost always frozen H&G at sea,
where much of it is processed in China into fillets before
being sold in the U.S.

pappiote, pan fried, grilling (flat-top), stir-fried, or sauted;

When cooking any species such as the species noted
above, it is important to treat the flesh gently (slow, low heat),
to preserve the delicate mild flavor, and exceptionally tender
texture. Go light on the sauce; the flavor should not be
masked - but rather complimented.
