Most like these tasty morsels sashimi style - raw, but don't
discount a simple blanch (served chilled or hot), or in your
favorite cioppino or soup recipe. These are outstanding when
wrapped in pancetta/bacon, and grilled on an open flame -
lightly caramelized/smoke infused. This is a prawn known
internationally for it's sweet, delicate flavor and special texture.
Thes prawns for years have been highly prized by Japanese
and Asian markets as an outstanding delicacy. They are the
largest of the seven commercial species of prawns found on
the Pacific West Coast. Some consider this prawn as one of
the very best in the world.
